Bake your way to spring with Solstice resident Eileen’s Perfect Pineapple Cake recipe

We have the privilege of delving into the pages of our cherished cookbook, “Traditions to Table,” where residents like Eileen H. from Solstice at Mesa View share their culinary treasures. Eileen’s Perfect Pineapple Cake recipe is a gem, passed down through generations and now shared with you, our extended family.  

Ingredients:  

For the Cake:  

  • 2 ¼ cups of all-purpose flour 
  • 1 ¼ cups of granulated sugar 
  • 2 tsp. baking soda 
  • 1 tsp. vanilla  
  • 1 (20 oz.) can of crushed pineapple (do not drain)  
  • 2 eggs 

For the Frosting:  

  • 1 (3.5 oz.) package of vanilla pudding mix 
  • 1 (20 oz.) can of crushed pineapple (do not drain) 
  • 1 (12 oz.) tub of Cool Whip or 1 cup of heavy whipped cream 

Instructions:  

  1. Preheat your oven to 375°F (190°C) and grease/flour a 9×13-inch pan. 
  1. In a mixing bowl, whisk together the flour, baking soda and sugar until well combined.  
  1. Mix in the vanilla, eggs and pineapple until the batter is smooth and well incorporated. 
  1. Pour the batter into the prepared baking dish and spread it evenly.  
  1. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. 
  1. Allow the cake to cool completely before frosting.  
  1. To make the frosting, whip pineapple and pudding mix. 
  1. Gently fold in the Cool Whip or whipped cream until the frosting is smooth and creamy.  
  1. Spread the frosting evenly over the cooled cake.  
  1. Refrigerate the cake for at least 30 minutes before serving to allow the frosting to set.
